Anyone have a good beet soup recipe that they like??
There are literally millions on line, but I thought I would
ask my friends on Pinecam if they have cracked this code.

I have golden beets from the farmers market in Dillon. We
have eaten the beet greens (yummy!!!) but now I am ready
for a healthy (ish? :O) ) soup recipe. Thank you!!

Not sure how this would taste with golden beets, I've only used the red ones.

This is from one of my cookbooks.

As I mention at the beginning of my book, I only use homemade chicken stock. No guarantees how my recipes will taste with store bought stock.

I usually used red cabbage, if I had it on hand. But with golden beets that might make a weird color, so I'd be inclined to use green cabbage.

Well, thank you. I used your recipe and the soup is outstanding.
I added a finely diced carrot to the vegetables and used green
cabbage. The tamarind in the Worcestershire Sauce added a nice,
subtle undertone.
I used an immersion blender and left some texture. This is a nice solid,
tasty and healthy meal. Just what I was looking for.

Yes adding carrots or potatoes will make it heartier.

Today for lunch I had it cold, topped with chopped cilantro.
That was pretty yummy, too!!
