What can I add to a GF cake mix (Pamela's vanilla) to make it interesting?

You could use the cake mix for a "dump cake".

I would thaw the fruit first; I think frozen spots within the cake mix would cause some parts to over cook and some to under cook.

I've used Pamela's cake mix before.

They have lots of recipes on their website

**select recipes under more information**
Their carrot cake version is okay and the coconut cake is wonderful!

Be sure to look up their recommendations for high altitude.

Here's some other ideas...
Banana & walnuts
Zucchini & walnuts
Apples, cinnamon & raisins
Blueberry & lemon zest
Pumpkin & orange marmalade
Canned peaches & pecans

I've been to bridal showers and birthday parties where Jello was added into the cake. I've no idea how to do that, but the cake was fantastic!

I seldom use cake mix, but when I do, it’s a dump cake. I would thaw frozen fruit first, but have used canned & fresh fruit in the past. Crushed pineapple & cherry filling works well with the lighter color cake mixes.

My week is getting away. Sorry to be slow getting back.
What I ended up doing was adding an extra egg to the cake mix along with an instant pudding mix and 3 T. sugar. Then I put together as instructed. Before baking, I added 4 cups of blueberries, lightly tossed with flour to keep them from sinking to the bottom. Baked per directions but needed an extra 15 minutes baking time.
It was/is amazing and so different and easy. Love it.

VERY interesting! I would have never come up with that combo.

I rarely use GF cake mixes but sometimes the sales are so good they are hard to resist.

I use Pamela's original Baking & Pancake blend for quite a lot of different recipes. I think it's a good all-round GF flour substitute. I often cut it with almond flour to boost protein but that only works for some things.
