 Post subject: Quick Mango Salsa

I needed something quick to accompany some chicken breasts.
Here is what I came up with:

Mango Salsa

1 can Del Monte diced mangos, drained
2 avocados, peeled and diced to 1/2 inch
1/4 cup Mt. Olive pickled, diced jalapenos
2 or 3 T. finely diced purple or sweet onion, pickled for an hour
or two in good vinegar, then drained
few grinds of fresh black pepper
Juice of small lime

Mix and serve.
Favors blend and intensify after sitting for a day or two.
I made this with what I had on hand. I'm sure you could
substitute fresh things.
It was great and I will make it again. Might try fresh
peaches this summer...

This sounds great only Id make it by leaving out the mango...and the jalapenos.... 8O

You could probably add tiny tomatoes and diced red bell pepper instead.
It would sort of quacamolerate it...
