Hey all,

Since I moved to Colorado from Louisiana 3 years ago, I've made plenty of Cajun food (gumbo, jambalaya, etc.), all of which require a good sausage...I haven't found a really good sausage option here. I was a little spoiled back home, my dad hunts deer and always has homemade deer sausage on hand, and the whole state is basically made of incredible pork sausage.

I might not find Louisiana style sausage here, that's okay, but there's gotta be some good local stuff somewhere that I'm missing out on. Anyone know where to get elk/deer sausage, maybe even smoked? If not game sausage, then just a really awesome smoked pork sausage would be great. Suggestions for butcher shops/meateries/brands/hunters with extra sausage welcome! :D

Colorado Sausage Company in Castle Rock. Wide variety. Even their Andouille was acceptable.
For Italian, I stand by Carmine Lonardo's for hot Italian sausage. I've only been to the place on Jewell Ave. in Denver. BEST hot Italian anywhere! They have others. It's also a deli and specialty Italian market.

We like Edward's Meats in Wheat Ridge. They make their own sausage, including Andoille and Boudin. I thought they had Taso, but it isn't on the website.
