Post subject:  Spicy Chicken Tortilla Soup

I've been working on this for a couple of years and I think I've got it.

You can use a rotisserie chicken but I found them to be too salty. So now I bake/roast four boneless, skinless chicken breasts rubbed with EVOO then sprinkle them with chili powder, garlic powder, basil and oregano until done. Remove them and cool and shred.

Then Puree 2-3 seeded, soaked ancho chiles, 1 onion, 2 tomatoes and 4-5 garlic cloves. Then fry this pureed mixture in a couple tablespoons of vegetable oil.

Once it's fragrant and beginning to brown, add 6 cups chicken broth, 4 corn tortillas torn into pieces (this will thicken your soup so don't skip this step), the shredded chicken and 1/2 cup chopped cilantro.

Once it seems blended - add a can of rinsed and drained black beans and 1/2 - 3/4 cup of brown rice and simmer until the rice is tender.

Ladle into bowls and have several garnishes to add:

fried crispy tortilla strips (or use tortilla chips)

crumbled Mexican cheese

avocado - chopped

cilantro

lime juice - just put out wedges of lime

Then enjoy!

I left out the beans (I'm allergic) but this soup is still really really good. Thanks for sharing.

I dragged this recipe out two nights ago and made it again - still good and used 4 ancho chilis and it's maybe a bit too spicy. I made my own chicken stock so it was extra good.

One thing that I will do differently next time is add the brown rice early - it didn't seem to cook through and wait until later to add the drained and rinsed black beans.
